#EOHUeats - Black Bean Salad
Recipe:
Prep time: 10 minutes Cook time: 0 min Serves 4
Salt-free black beans, drained and rinsed 1can (19 oz /540 mL)
corn kernels (canned, frozen or fresh) 1 cup (250 mL)
Tomatoes, diced ½ cup
Olive oil 1 Tbsp (15 mL)
Lime juice 1 lime
Cilantro (fresh or dried) 3 tbsp fresh or 1.5 tbsp dried
Garlic (minced) 1 clove
Pinch each of ground pepper
1. Mix all ingredients in a medium sized bowl. Refrigerate for 1-2 hours. Enjoy!
